I hope everyone had a lovely fourth of July weekend! It was the most beautiful weather here, which is pretty incredible this time of the year in the midwest. Usually perspiration starts beading up on your face the instant you walk outside in the humidity but luckily we had a few days off from that. No worries, it is back in full force today. Nothing too crazy happened around here and by that I mean, I am still pregnant. Wah-wah-wah. Apparently this baby is pretty comfy in there. I must say though, I am enjoying my last few nights of sleep before the midnight feedings begin and no longer feeling rested. Sleep deprivation and I do not go well together. Ask my poor husband…yikes!I am holding out that baby three will actually be a sleeper. I wouldn’t know what to do if I had a child that slept through the night within the first year, that would be pretty incredible.
Regardless, I have some great recipes to share with you this week and we are going to start out with this pretty little salad. Seriously, every time I see a picture of that shrimp my mouth starts watering, I may drool slightly and then I have immense cravings for it. Unfortunately, I don’t have any shrimp at the moment. Actually, we really don’t have a lot of groceries on hand. EEK… I should have went to the grocery store before the holiday. You see another perk of living in a small town, nothing is open on holidays or Sundays. Did I say perk?
I guess I will just have to keep drooling, but did you try the garlic, buttered shrimp out yet? A must, seriously! Plus add it to this pile of seasonal produce and a little (or a lot of) bacon and you have yourself one heck of a meal! Fresh produce, smoked, crisp bacon and buttery, garlic shrimp…yes please!!

- Garlic, Buttered Shrimp
- 1 lb bacon
- Fresh greens
- 2-3 tomatoes
- 1-2 Avocado, optional
- Freshly cracked salt & pepper, to taste
- Bake bacon according to directions.
- Cook shrimp.
- Chop leafy greens, tomatoes and avocado.
- Assemble by placing lettuce and topping with your favorite toppings.
- Drizzle with olive oil and balsamic vinaigrette.
