One thing I’ve learned as my kids enter the world of school and after school activities is I had no idea that lack of time that I would have. I mean I always thought I knew, but really I had no idea.

So here I am floundering in a deep-sea of carpooling, waiting in school lines, volunteering, packing lunches, making breakfast, brushing hair, working more hours than I ever have and still trying to sit down to eat dinner. And I say sit down lightly because I rarely ever experience my kids sitting all at once.
Usually our meals consistent of endless demands to sit in your chair. Yet they just don’t get why they can’t eat under the table, beside the table or even on the table. Oh we’ve had it all. Most nights we’re lucky they show up clothed, so we’ll take the argument to sit.
Regardless, I’ve felt the need of the quick, effortless and fast meals. Gone are the days of multiple pots, complexity and endless ingredients. I need effortless meals, or as my sister says the stupid simple ingredients I don’t have to think about but can just do. So welcome to a new me, a new Simple Roots where we take the work simple seriously.
meal prep is everything
While I find myself wavering not just once a week but two, three maybe even four nights on grabbing take, craving convenience and anything I can just pop in the oven I also want to challenge those thoughts. Because at the end of the day health is a bigger priority than many other things on my list so I must press on.
The challenge is pressing on and making it work. Not just making it work but making it a relatively stress free scenario, recipe, meal that I enjoy. Because only in enjoyment do we find lasting success. That’s what this series is all about. Making really good and healthy food delicious in less time and less ingredients!
I’m over complicated.
But I do know one thing, meal prep is still my everything. Not your typical meal prep, not even meal prep like I used to teach but the hacked version of meal prep. Basically you make the staples or prep the ingredients rather than the entire meal. Take this easy spaghetti recipe with garlic and kale. I didn’t prep this specific meal but I did do this:
- Brown 2 pounds of sausage – one for this recipe and one for breakfast later in the week.
- Spiralize the sweet potato and bag them to refrigerated.
That’s all I meal prepped for this recipe, well and my breakfast. It’s that simple and yet just these two steps I did over the weekend saved me 10-15 maybe even 20 minutes on a weeknight. Time I didn’t have then. I’m telling you there is power in meal prep, but meal prep done right. None of this prep an entire meal thing. That’s way too complicated!

the easy spaghetti recipe
Can we just say if you’re going to eat this much kale there should be no restriction on how much spaghetti you eat? Okay maybe take that with a grain of salt. But here’s the deal, I don’t love kale but I love this recipe. Not just semi love but REALLY love. It’s definitely become a family favorite and the better news it’s easy.
Now while you could use spaghetti I went with the spiralized noodle option. I’m always looking for a few additional ways to add vegetables to my diet and the spiralizer has probably been one of the greatest inventions to do that. This is the one I have.

I’m slightly obsessed with spiralized sweet potato noodles and picked up some white sweet potatoes I thought would be perfect in this, they definitely were. But use whatever desired spiralized noodle or actual noodle to complete this recipe! If you’re looking for a vegetarian option, you could just omit the sausage and add some white beans. Basically make it what you want, it’s pretty simple with a hundred ways to expand!

- 4 cups cooked spiralized noodles {or spaghetti noodles}
- 1 pound sausage {Italian or breakfast}
- 6-8 cups torn kale leaves {hard stems removed}
- 3-4 teaspoons minced garlic
- 2 tablespoons olive oil
- ¼ cup butter
- parmesan cheese & red pepper flakes {optional}
- Cook spaghetti noodles and/or spiralized noodles in a pan.
- In another skillet, brown sausage. Drain and set aside.
- In same pan add olive oil and garlic. Cook until fragrant about 1-2 minutes.
- Add in kale leaves and continue cooking until just beginning to wilt.
- Add in butter to melt and stir continuously . Once melted add back in sausage and noodles.
- Serve garnished with parmesan and red pepper flakes!
- Enjoy!
