I’m all for easy and I’m all for delicious. When they combine it turns into this glorious moment I never want to forget. Because lets be honest, those few moments of easy and delicious that happen throughout the day are rare and sacred. Given that I’ve most likely wiped more snotty noses and changed more dirty pants than I’d like to admit. Not to mention the fights, scrubbing pen off the wall and cleaning up spills.
So yes, delicious food that doesn’t take 30 different pans and over 30 minutes is my kind of food.
And because I know I’m not alone in this busy world, I bring you the easiest 30 minute baked fajita recipe ever. Like ever, ever.
Seriously though, juicy strips of protein (you’re choice) combined with sweet caramelized onions and peppers that you didn’t have to saute equals absolute perfection. But the best part is once you bake this sheet pan meal there are a billion different ways you could serve it. Or better yet, let each family member choose for themselves how they’d like it. Maybe we should call this the ultimate fajita bar.
But in all honesty, aren’t these the best meals? The ones where you cook the main dish and let everyone get involved by dressing their own up just the way they like it. It’s a great way to end the food fights and also why I like meals made for a bowl and all things taco Tuesday. You should try it out for yourself.
Obviously I could go on and on about savory flavor and the ease at which you can make this recipe, which is about to take over your meal plans for the month, but I’ll spare you. Because let’s be honest we can only talk about the bold, beautiful color of the peppers and the perfect caramelization of the meat so long before you shut me off for the day and hope that I never talk about such things for so long again.
So I’m moving on to bigger and better things.

This recipe is cleanse approved. Gasp, jaw hits the floor, sobbing with excitement. I know, I know I am SO excited as well. There are a lot of reasons. One is simply because when most people think of a cleanse they think, liquid diet, bland, boring and awful tasting potions. If done right cleansing is completely and 100% safe, even for children (that is with the new way to detox). It won’t make you become BFF’s with the bathroom, make you lose your mind, starve yourself to the point of bingeing or make you even question the very essence of life.

And now back to the baked fajita’s. Just add them to the meal plan, buy the ingredients and be amazed. If nothing else, buy and prep the ingredients and store them in the freezer. It’s a simple meal to freeze and an even simpler way to one healthy convenient meal for your family.

- 2 lbs protein (sirloin steaks, pork or chicken)
- 4 sweet bell peppers, seeded and sliced
- 1 onion, thinly sliced.
- 3 Tbsp olive oil
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1 tsp salt
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Toppings:
- lettuce, avocado, tomatoes, cilantro, ranch, corn tortillas, cheese, chili peppers, olives
- Preheat oven to 350 degrees.
- Thinly slice protein and place in a zip lock baggie with 2 tbsp olive oil along with mixed seasonings.
- Mix well and massage into meat. Set aside.
- Meanwhile, thinly slice onion and bell peppers, coat with additional 1 Tbsp olive oil and place on a baking sheet.
- Top with seasoned meat slices and spread out to cook evenly.
- Bake for 25-30 minutes or until meat is done to your likely and vegetables are tender.
- Remove and add to your favorite fajita bowl or corn tortilla shell.
- ** TO FREEZE: Place meat, oil and seasonings in a freezer bag and mix to combine. In a separate freezer bag add vegetables. Label, date and freeze for up to 3 months. Cook according to directions (preferably thawed before baking).
