I think the title sums it up. Literally six ingredients, five minutes and a hot waffle iron and you have yourself one heck of a meal. These gluten-free waffles are the must-have recipe of the century.
It isn’t fancy but it is quick, delicious, healthy and easy. Not to mention there are about a thousand different ways to use waffles from sandwiches to personalized pizzas to nachos or just a quick grab-and-go breakfast, I’d definitely recommend put this recipe in your back pocket.
Or you could just grab your blender and whip up a batch tonight considering these are pretty much staples in most people’s home. And if you happen to be thinking what I’m thinking, breakfast in bed on mother’s day, yes please!

Maybe not in my bed considering I would have nightmares about the mess my kids could make with syrup in my bed.
Lets just erase that thought from my mind. I mean I did get a new comforter and all. Not that they notice. SIGH.
The first day it was on my bed the three unruly employees (a.k.a. our children) came running in from outside where they had been making sand pies which entails muddy sand plus water to hop in our bed, under all of the covers to pretend sleep.
WHAT?!?
My blood was boiling when I found them completely wet and covered in sand now lying in my freshly clean and once made bed… with a new comforter cover of course.
I’ve always dreamed of a light and airy comforter. Presumably white with hints of yellow. Why in the world did I EVER think that would be a good idea. White + kids = a nightmare in the making. Fortunately, the now slightly stained comforter just goes with the rest of the house.
They tell me I will miss this. I’m going to believe it and just take one deep breath after another and believe it only adds character, right?
I generally cling to the phrase, “homes are for freedom of expression, not good impressions.” It’s my saving grace and I say this all as someone is coming over to look at our stove top unexpectedly and I sit writing this pondering if he can even find the stove-top. Oh goodness someone send send help. That poor poor man will never look at us the same again.
But that goes for the rest of the neighborhood and small town. Generally we’re all a hot mess over here. The good news, supper is done and if nothing else, these bring a little extra beauty to the day. Of course until someone plows their face in the mound of whipped cream. Head first of course.
It never fails.
And if all else fails in your life, know this recipe will not. A hidden gem, a family favorite and something to leave an impact on your kids for the rest of their life. Because who doesn’t remember a piping hot, delicious and comforting breakfast to wake up to? What they don’t need to know is that you didn’t have to slave over the stove for hours to make it.
SIGH.
It’s the little things that make all the difference.
On a side note, I thought these would be a cute recipe to add to your list of shower food. You know baby-shower and bridal shower since tis the season. Make them up ahead of time and surprise your guests with the variations. It’s like cake… made in a waffle with a heavy dose of homemade whipped cream… or goat cream. Okay, that got a little weird again.
Here’s our variations for these six ingredient gluten-free waffles made in a blender:
- waffles + almond butter + strawberries + bananas + honey + almonds
- waffles + whipped cream + bananas + cocoa nibs + caramel sauce
- waffles + whipped cream + lemon + blueberries + syrup
- waffles + whipped cream + strawberries + chocolate chips + honey
Don’t forget the savory route as well. But I’ll post more on this soon.
In the meantime, cheers to easy waffles… that don’t require sixteen steps… or folding anything… or heck 30 plus minutes of your time and eight dirty dishes.
HIGH FIVES!
- 1 cup oatmeal
- 1 cup cottage cheese
- 6 eggs
- 1 tsp vanilla
- 1 Tbsp maple syrup
- 3 Tbsp olive oil (or coconut oil melted)
- Add all ingredients to a blender.
- Puree until smooth.
- Pour in heated waffle iron.
- Top with your favorite toppings.
- **Suitable for freezing in air-tight storage container.
