There’s one thing that is certain in my life, I love tacos. In fact I live by the quote, “The only bad taco is the one you didn’t eat.” I have to say these make-ahead healthy breakfast tacos are no different!
There is something so perfect about juicy meat, a mixture of sautéed and fresh vegetables, and cilantro all wrapped up into a soft shell. Tacos combine ingredients like a perfect marriage.
Bliss.
Given this, you can also probably assume that we have tacos at least once a week and often more as leftovers can make the best taco combinations. Basically ‘everything but the kitchen sink’ tacos are my jam.
So you can assume the excitement I had when Simply Organic reached out and wanted to know if I would try out their new Simmer Sauces. One, the word sauce always grabs my attention like a dog who sees a squirrel. Combine that with the fact that these simmer sauces are all of my favorite flavors including; enchilada sauce, classic fajita sauce, mild taco and southwest.

I do have to admit, in the nutrition world and even more in the real foods world I’m often questioning the authenticity of a good sauce. Generally speaking, traditional condiments, sauces, and dressings contain some of the highest amounts of artificial ingredients and preservatives.
This is also the reason they can sit on the shelf or in your refrigerator for what seems like years and never go bad.
Now I don’t want to ruin ranch dressing for you but if I’m being honest, condiments are not great for your body. I would even go as far as to say that you should avoid most store-bought, pre-made dressings, sauces and condiments {and you know I rarely say those words}. Or in the least, try to work on your own homemade version.
Yet there is this entire convenience factor I so get. Especially in my own life right now. You have work meetings, kids are in school and after school activities and the last thing you want to do when you get home is slow simmer your own sauce from scratch.
daunting is an understatement
Fortunately, great brands like Simply Organic are coming to rescue us from the mid-week madness. These sauces are legit and with pure ingredients you can read. I don’t know why you wouldn’t stock your pantry full of these.
In this recipe, which I must add can be prepped ahead of time, stored in the refrigerator for a quick breakfast {lunch or dinner} any day of the week, I used the mild taco sauce.

It seems too good to be true but it’s right at our finger tips. The sauces come in easy pouches to be opened, poured on, simmered and eaten. I may also confess we tried all four of their simmer sauces in one weekend. That good, I promise you.
I’m totally doting all over Simply Organic for this creation but it’s a busy mom’s dream.
the perfect make-ahead meal
So lets break down the recipe for these easy make-ahead breakfast tacos.
The meat is a slow cooked pork shoulder but could be any slow cooked and shredded meat of your choice. Leftover brisket, bring it on. Rotisserie chicken you didn’t get eaten up, simmer away. Literally shredded meat with some sautéed onions and peppers all mixed together and simmered with a packet of Simply Organic Simmer Sauce.
From there you can either make a taco or store for tacos mid-week.
Add some scrambled eggs, cilantro, red onion, salsa, avocado, beans, corn or whatever else you prefer on your tacos and eat up. Even better is once you have the base, the shredded meat, your family can top it the way they like it making everyone happy with virtually no work.

Take the work out by prepping ahead. Here’s how:
- Slow cook pork shoulder {or choice of meat} and shred.
- In a skillet, add in diced onions and pepper strips {optional} sauté until softened.
- Add shredded meat and pour on simmer sauce.
- Simmer for 4-5 minutes and let cool.
- Place in a glass container in the refrigerator to pull out and put on tacos anytime you need a quick meal.
Of course adding all of your favorite toppings and even scrambled eggs for a healthy, delicious and filling breakfast.

- 3-4 cups shredded meat of choice {I used slow cooked shredded pork shoulder}
- ½ yellow onion, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 Tbsp olive oil
- 1 packet Simply Organic Mild Taco Simmer Sauce
- TOPPINGS
- Tortilla shells
- Scrambled or Fried Eggs
- Avocado
- Diced Tomatoes
- Lettuce
- Cheese
- Jalapeno Peppers
- Fresh Cilantro
- Slow cook meat and shred.
- Dice onion and slice bell peppers.
- In a large skillet, add 2 Tbsp olive oil and heat over medium heat.
- Add in onion and peppers and cook until softened.
- Once tender, add in shredded meat and pour in packet of Simply Organic Mild Taco Sauce.
- Stir to combine and continue simmer for an additional 5 minutes.
- Place on tortilla shell and top with your favorite toppings.
- OR place meat in a glass container and refrigerator to be warmed up and eaten all week long
